In Italy, where everything is art and presentation still matters -- laundry comes home from the cleaners wrapped in floral tissue and tied with a ribbon -- a barista would sooner croak than hand you a latte without the crema drawn into a beautiful swirl. Two of my fave spots in MSP have started to do this now. I agree -- it's like someone handing you a small piece of art every morning.
